Bitter Gourd, also known as Bitter Melon, is a nutrient-dense vegetable that originated in Tropical Africa and is later grown in Asian countries. It is known by various names, such as karela, goya, and karuvila in Asian countries. Even though this vegetable is bitter in taste, 100 gms of bitter gourd includes 99% of Vitamin C and less than 2 percent of Vitamin A and contains other minerals like iron, potassium, folate, and calcium.
Ingredients*
2 medium-sized bitter gourds
¼ tsp turmeric powder
½ tsp red chilli powder
1 tsp coriander powder
1 tbsp rice flour
2 tbsp of Besan/ gram flour.
Salt to taste
3 tbsp of Oil for pan-frying.
Method
1. First, clean the seeds of the bitter gourd.
2. Slice the bitter gourd into small rings
3. Add all the dry ingredients to form the marinate masala.
4. Marinate the bitter gourd and keep it aside for 15 to 20 minutes.
5. Take a frying pan. On a medium flame, add oil to the pan. Once the oil is hot, place all the bitter gourd rings. Flip them on both sides to get a light brown colour, which gives perfect fried bitter gourd rings.
Note: To remove bitterness, put the bitter gourd in salt water for 15 minutes with vinegar to remove the bitterness.
